Christmas Eve I made a German sourbraten with mashed potatos and lashings of gravy

 

Christmas Day I made a Roast Turkey. I managed to get one that weighed 5.6kgs to fill the bellies of my family. I covered it in bacon and stuffed it with my homemade stuffing.

My home made stuffing consists of roast chestnuts, 500g of mince, an apple, one onion, garlic crushed. Spiced with paprika, curry powder, salt, pepper, cinnamon and nutmeg.

I served it up with brussel sprouts, mashed parsnips with butter, yorkshire puddings and lashings of gravy. Nom nom nom.

 

Yesterday was Beef Rouladen with a lambs lettuce salad (Feldsalat) and dumplings.

 

Today... beef steaks, Chips/french fries with tomato salad (Olive oil, dark balsamico vinegar, onions, garlic, oregano, salt and pepper.)

Leftover beef- so turned it into beef curry. Cut into strips with whatever veggies you have- I had some cauliflower and sweet potatoes. Used beef stock , some curry sauce, curry powder, . Ginger, cinnamon and mango chutney.

Serve with veggie rice and naan bread if you have any. Plus more chutney on the side, tomato salad, and I love a few sliced peaches or mangoes. ( use tinned)

Cornish Pastries are the best!

 

I also made their cousin, Empanadas, for a second time during the holidays in celebration of Argentina's 3rd world cup win! Made with ground beef, chopped onions, cumin, paprika, beef broth, and some pieces of boiled egg, a green olive, and some raisins for a hint of sweetness.

 

Made enough for leftovers tomorrow! Perfect for kid's snack box and for taking to work. I use the flammkuchen teig as the dough , slather them with olive oil and cook them in the air fryer for 8 mins. Came out great!

P.S., Of course "ours" are the true empanadas and those are deep fried. :ph34r:

Yesterday evening: Some left-over veggies (onion, celery root, carrot and pumpkin) in rich juice (apple~ included plus some olive-oil) from the baked chicken-legs a few days ago, mixed with simple left-over pumpkin-soup and a 400-ml-can of peeled tomatoes. Salt, pepper and a little bit of curry powder already there, I just added some bay leaves and cooked that on minimum heat for about 30 minutes, yielding in about 1 liter of sugo.

250 g of lasagna-pasta and sauce bechamel (60 g flour, the fat from the sauce, 3/4 liters of milk) with cheese and that sauce, prepared the usual way. We still have half of it left for today. :-)

One of the things I do miss from back home is Fray Bentos Steak and Ale pies. Like many things 'of old' they used to taste much better I thought than I tried recently. Was just ever so easy. Open lid, put in oven, eat and throw tin. Ah, student days... :D

 

I do find most shop pies and such like made to a cost and often skimp on ingredients or use poor quality ones. It's even very noticeable what you can buy in terms of vegetables now taste poor in comparison to what I grow in the garden. However, those 'Cheeky Pies' do look nice. Maybe a project for this coming week....

I make these very occasionally.  With ready made pastry if you are feeling lazy, and cooking the ingredients the day before it is not tricky. But if you live alone a bit of faff for one person I guess.  Ditto steak and kidney pudding.  Biggest problem for me is find lambs kidneys.

Those pies were the thing my Dad always asked us to bring over to SA - trouble being they look a bit landmine-ish on the x-ray machine, so explanation was always required...

Can't help with kidneys but friends of mine cqn find a liver!

Making fried Texas Gulf 'Colossal' sized shrimp, but you can use what you prefer and what's available in your area.

basic breading and seasoning recipe:

 

1/4 cup flour

2 tbsp corn starch

1/2 tsp baking powder

1/2 tsp salt

3 tbsp oil (non olive oil)

1 tbsp olive oil

1/4 cup water 1 egg

 

note: I also add a bit of onion & garlic powder, and grated jalapenos in the batter

 

Wash, peel and devein the 'giant' little morsels.  I use a paring knife to make a slit along the back to butterfly them.

This recipe is sufficient for approx. 18 shrimpsies. you can modify based on your shrimp count.

 

Dip the shrimp in a light coat of breading and fry 1 1/2 minutes on each side.

choose your fav dipping sauce. I've found that 3/4 cup mayo and 1/2 cup sweet chili sauce has a nice taste.

I haven't been well and have had to rely on other people cooking for me, with indifferent results.  But today I had a couple of Yukon Gold potatoes, mashed with butter, and they tasted far, far better than anything I've eaten since October.

Sorry to hear that. Hope the Yukon gold buttery flavour helps.  Try them with cabbage next - a la Colcannon!
