Quarter sweet potatoes, slice red peppers and onions. Season with paprika, pepper, garlic and herbs of choice. Toss items in oil, then spread onto a deep oven dish. Use chicken breasts / thighs. Wrap in ham or bacon, lay over veggies. Slice a small lemon and scatter over all. Cook in pre heated oven, 30-45 minutes till chicken cooked. I serve with rice, and make some spicy sauce using pan drippings.

Hello all, I'm looking for someone who owns a Thermomix and a pasta rolling machine. I have a recipe that works very well by hand, but I need feedback when using those two machines. pm me please. Thanx.

Apple Chutney recipe, I translated it from my mothers original hard copy into German for my wife but have added back in some important points in English. If anyone needs clarification please let me know.

 

Apple Chutney
Zutaten (Ingrediants)
Macht ungefähr 4 Gläser
1.8 kilo (4lbs) kochen Apfel, geschält und entkernt.
1 große Zwiebel
340 g (¾ lbs) Demerara (brauner) Zucker
235 ml (½  pint) Malt oder Pickling vinegar
2 Teelöffel Salz
Vorbereitung (Preparation)
Die Äpfel in Scheiben schneiden, die Zwiebel hacken und mit Zucker, Salz und Essig in einen großen Topf geben.
Kochen (Cooking)
Langsam zum Kochen bringen und 3 bis 4 Stunden köcheln lassen, Ohne Topfdeckel  Die Mischung sollte dann dick genug sein, damit sie nicht schnell zusammenfließt, wenn ein Löffel hindurchgeführt wird. (The mix should then be thick enough so it does not flow together quickly when a spoon is passed through it).
.Verarbeitung

Gießen Sie es in ein erwärmtes Glas und bedecken Sie die Oberfläche mit Wachspapier, bevor Sie den Deckel schließen.

OOps

Just wanted to add to the apple chutney recipe that the 1/2 pint of malt vinegar is an Imperial pint not a US one, i.e. 10 fl ozs instead of 8 fl ozs.

Which means 284 NOT 235 ml.

I’ve just made a Thai chicken curry with green curry paste, aubergine, coriander, chili, onions, coconut milk and Jasmin rice.

It’s for a Greek couple of almost my age, headmaster of a school and music teacher respectively, who are fast becoming good friends and who have never ever eaten anything remotely foreign...( apart from pizza and pasta.)

 

Next up- banana bread!😜

Tortellini soup-

onions, chili pepper, goulash meat, Rosemary, Bay leaves, S&P, Paprika, Tomato paste,   Red wine, Beef stock, can kidney beans and can small white beans, plus  dried tortellini.

Chop and sauté  onions, chili, meat, add   rest of ingredient, except Tortellini and beans

Simmer for 1/1/2 hours, or less if using Instant pot!   Then add pasta and strained beans and cook a further 20 minutes. Check for seasoning,  stir in a spoon of sour  cream, and serve with baguette.
