Since Carm's post about my hot nuts, I've had a few requests for the recipe. Here it is. It's in imperial, I hope you can all cope with the heathen measurements.
Heat 2 tablespoons peanut oil in a large frying pan and toast 2 cups of mixed nuts in it for 1 minute. And 1/2 cup of sugar and cook until the sugar caramelizes (just light brown is how I like it). Turn it all out onto a baking sheet and sprinkle on 1-2 teaspoons salt, 1/4 teaspoon curry powder and 1 teaspoon cayenne pepper.
If you want to mess around with it, feel free. Just one type of nut works, other spices too. I wouldn't change the oil type to olive oil, but sunflower oil would probably be fine. Also keep the proportion of nuts to sugar the same. And unless you have a really big frying pan, don't make more than one size batch at a time.
