has anyone seen cornbread mix at one of the supermarket chains? I was going to make it from scratch, but am running out of time. thanks
Nope. Not a common thing here, cornbread. Might be available at Kaufhof / Karstadt (or even KaDeWe for you there), but I doubt it. Besides in the time it would take you to "run to the store" and back you'll have spent the time it costs to make it from scratch in the first place.

Cornbread-from scratch-no time?
Baking time is the same if from scratch or from a mix. Running to a store and buying a mix and going home again certainly takes the same time as everything else you do to make cornbread - before you put it in the oven.

I brought my aunt jemima cornbread mix with me from the states and have it in a freezer bag in my deep freezer.. I have seen yellow corn bread mix (or as we call it at home Yankee cornbread) so like my grits, masa mix and krusteaz pancake mix
I am rationing it out.. by end of april I will be eating grits.. pancakes... cornbread and making tortilla and tamales because I am heading home in May and bringing in a new supply for the next year..

I may not be a Merkin but I make cornbread to a recipe from a Sainburys (UK supermarket) recipe quite often, there are all of, ohh, four ingredients, all of which are readily available anywhere in Germany. Mixing the ingredients to a batterand pozuring into a mold are easily as fast as opening a packet.
What does Betty Crocker have that "Real Food"[tm] made of real ingredients doesnt?

P.S. I just had a look at the ingredients of the Aunt Jemima Mix - It has almost exactly the same ingredients as my fresh made recipe. The only things missing from my recipe are the ten kilos of nutritionally worthless processed chemical crap that "Aunt Jemima" feels moved to add to her mix. If you really are suffering from the chronic vitamin definciency that Aunt Jemima seems to be worried that you are, eat some fruit.

You can find cheap cornmeal at larger Asian groceries, near the more exotic rice and grains. (I'm not sure which Asian cuisine uses it, but anyway) it comes in a yellow bag imported from Colombia. Cornbread is ridiculously easy, just look online for a recipe.
