Glass Noodle Salad

Ingredients

75g-100g glass noodle (tang hoon)
250g minced meat, cooked
100g prawns, shelled and scalded (can also use packed prawn from Aldi or sotong)
1 big red onion, thinly sliced
3 stalks coriander, chopped (don’t throw away the end parts, to be used – see below)
1 Paprika, thinly sliced
1 Carrot, thinly sliced

Sauce: (to be pounded)
3 fresh red chilli (or more)
3 garlic
Coriander (end parts with root)
1-2 tsp palm sugar
dried prawn, soaked and drained
(to be added into Sauce after above ingredients pounded)
1 green lime juice
1-2 tbsp fish sauce (nampla)

Method
1. Pour hot boiled water into glass noodle and soak until transparent look. Drain and wash in cold water and drain.
2. Put all ingredients in a salad bowl and mix well. Try the taste.
3. To be serve. (can put in fridge if cannot finish)
