Due to a mistake in the grocery order, instead of receiving 2 chillies, I received 2 KILOGRAMS of chillies. They are long, small green chillies, so-called rocket chillies. I need some ideas of how to use at least a portion of them up. I think I'm going to end up giving the majority away, but it would be nice to reclaim at least part of them.

make some chilli oil...you can use quite a bit of them for that...
and why don't you freeze some?

Haha, the freezer is crammed full of frozen fish (another story), there's no room.
Chop them up and freeze them in tupperware if you can't use them up now -- use as fresh. No particular ideas for chiles that aren't hatch poblano chiles though, I would have made New Mexican Green Chili with those...
Edit: too slow. Eat the fish now then, you've been waiting for an opportunity yes? The chilis will take up less room than the fish...

Pickled chillies? Also slow roast them for a little while and then make a chilli paste which will keep a while longer.

or...I had deep fried hot chillies (also the little ones) with other deep fried crisp type things (tasted a bit like tortillas) when I was in Sri Lanka...as a snack...the deep frying seemed to take some of the edge off, very nice and crispy and great with beer.

but I think the chilli oil is still your best bet. You could also make some in pretty bottles which make great gifts...
and like the other person said - picked iis another idea and great with asian style food...

Tomato chilli jam - have used this recipe and it is excellent in combination with the venison burger.

You could also make a very nice chilli "sauce verde". Chuck some chillis, onions, green peppers, coriander leaves, garlic, a bit of ginger and a slash of pure lime juice into a blender and slowly add some some extra virgin olive oil. Add salt to taste. It'll keep in the fridge for ages and you can use it to cook with or as a refreshing type of sambals with curry.

String them up and let them dry is also an option! Or give them to your local indian restaurant. It sems such a pity for them to be thrown out.

I know Mark, but I doubt he wants to come and pick them up. Bit expensive just for some spicy veg. Gideon, don't worry, they won't get thrown out, not even onto the compost pile. These are all good ideas folks, thanks. Keep them coming if there are any other ideas.

I love this topic because I always read "too many children".
Stuff them with creamed cheese mixed with herbs and garlic and either pickle them or store them in a dark, cold place in light-proof jars filled with olive oil and more herbs and garlic.
Slit them apart, remove the seeds and slowly dry them in the oven, then string them up for later use.

There's an infinite number of chilli sauces you can make and many with a high vinegar/salt/oil content don't even need keeping cool.
You can preserve whole chillis in oil or vinegar, simply wash, dry carefully and immerse.
Chilli pickle is great, if you're into insanely hot pickles and you can easily use 2Kg in that.
Chillis kept in the fridge with enough air round them (ie. not packed tightly in plastic) will dry out instead of going off.
NB: If you do prepare 2Kg of chilli in one go then don't rub your eyes, nose or privates for a few days...

Not being a serious heat freak, 3/4 of the chillies have been rehomed. Interestingly, one of the people I gave chillies to said they help him with his migraines. All your ideas will be considered for use on the remaining pound I have. Thanks again. Oh and HA, I'll be using gloves for anything I prepare, don't worry.
