Ok so I want to make bread pudding. I have mixed spice brought to me by a friend from London on her last visit, BUT what do you call Suet here and where do I find it. My local butcher is clueless!!

suet is usually the fat found around the kidneys, although this does (obviously) not account for vegetarian suet!! A friend here did one year get kidney fat from her butcher to make mincemeat with, can't remember if it worked or not. Just gave my last packet away or you could have had some. Always import from UK...

Or Nierenfett. But there are plenty of suetless recipes around too, like
this one from Delia.Or try a different butcher.

Thanks for all your help. Suet is Kidney fat that is rendered (cooked down) to use as fat in things like bread pudding and mince pies. I printed the translation with the words you posted to my butcher and he is still clueless.
Yes there are suet free recipes and I depend alot on Delia Smith HOWEVER my husband is a very picky traditionalist. He will not eat bread pudding without suet! He just would not eat it if Imade it. You brits have some weird ideas what food is

Beef kidney is a bit strong in flavour, so not used extensively. I personally only use it for dog food. You can get them certainly get them though, and I don't see why the butcher wouldn't give you the fat. He might think it a bit weird, but what does he care. The fat itself is quite identifiable by its hardness. It really is hard stuff. You do not actually need to render the fat atall to make suet. Lard for example is rendered pork fat, and if you compare the consisitency of lard and suet, you can see a difference. So don't worry about rendering, you just need to make sure you trim the fat down well - basically get rid of any blood vessels, or bits of gacky tissue. Once you have some nice pieces of white hard fat, just grate it up on the coarse side of your grater, and voila, you have suet. You might wanna pop the fat in the freezer for 10 minutes before grating, makes it easier.
Suet free recipes are only ever gonna be approximations. Clearly, the taste will be different, but the main reason you use suet is because it melts at a pretty low temperature, so it can be steamed, like a steak and kidney pudding or xmas pudding.

I posted this on another thread, but I thought it might really belong here. I have been to my butcher with my dictionary but he is clueless. Any ideas where to find suet? My husband will NOT eat bread pudding unless its made with suiet.

Thanks Deccie I actually printed out the defintions from a online German dictionary and took them to my local butcher. He is still clueless.

I don't know why this was moved. I posted it under cooking because no one in NRW knew the answer. There is already a thread here. It REALLY bugs me that things are moved and deleted without any notice!!!

Why do you say nobody knew the answer? Your question was answered by no less than three different people all within 65 minutes of you asking. OK, they might not have specified a particular shop that sells suet, but they've told you now what to ask for. Have a bit of patience and maybe someone else from around the Essen area will post up a tip.

noone can really successfully live in another country unless they are prepared to adapt. Tell him to adopt a new tradition

For mince pies I make sure that whenever I visit the UK I buy a couple of jars of good sweat mincemeat & bring back with me. It keeps for a couple of years...
...have to make mince pies on Sunday. My "rich shortcrust pastry" comes out a treat...

My husband has lived in several countries and continents, but there are some things that make it feel just a little bit less lonely. He is very adaptive, he will just do without bread pudding..LOL But if I make it we MUST have suet.
Thanks Elaine, I will check out the store in Cologne. I have been in that store on several ocassions and never thought to ask for suet...ah well. Thanks again!

Well you can say that now that you deleted one thread and combined the posts without any notice. Oh and changed the subject to suet your idea of what it should be. Now it looks like alot.
