Returned from holiday to find dog had peed on carpet. Stain has been there about two weeks after a feeble attempt by dog-minder to remove stain.
Any good suggestions as how to remove the stain.?

Have you tried stain removal products made for carpets?
you want the stain to go away, but more importantly you want to make sure you get the urine out. Get natural cleaner that also breaks down the enzymes in the urine. If you don't then your dog can still smell it (even if you can't) and that scent can possibly cause your dog to go there again, or if other dogs ever enter your house they may go there since it's already marked.
I don't know the products in Germany, but try to find something like Odoban, urine off, bleach, amonia mixed with water (i'd have to check the ratio), simple solution.
As for the stain itself some of the above products will help, but after those are applied and cleaned up to get rid of the urine for the dog to track it then you'll want to clean the stain. Try a steam cleaner, oxiclean, regular carpet cleaner, etc.
My favorite is simple solution they make it for carpet and also for hardwood floors. It cleans up the stain and also takes care of the odor (for human and dog noses). If you want to be particularly careful use simple soltion and then later odoban or vise versa. I have simple solution at my house. The kennel club I teach at has odoban (and also a bucket with water/bleach for big spills/rubber mats).
you may also want to see if you can ask the dogsitter or watch the dog to figure out why the accident occured. Was the dog in too long, was it scared of something, etc. Also, if it happened multiple times it wouldn't hurt for a few days to "re-housetrain" the dog. Take it out every 1-2 hours for a day or two then after that for another day or two often, but not as often. If it had a few accidents it helps to go over housetraining in a crash course to make sure your dog didn't develop a habit of using the house. It's a pain for 3-5 days, but it'll save you a few weeks of surprises and anxiety.
(of course, it probably was a one time thing and the dog is fine and hasn't developed any new habits or anything to worry about)

If you're in Germany, Gallseife as block, liquid or paste is amazing on organic stains (including red wine on a beige carpet, YESSS! Forget all that salt and white wine crap!) Ox-gall soap is the translation but I don't know whether it's available in the US or GB or what brands to look for.

I am assuming this works on cat pee as well. Can anyone confirm? Thank you.
sorry, nope. I know simple solution does. Again, you want to get all odor out. In my experience cat pee comes back with avengence. you think it's gone then bam! 6months later a hot and humid day and you smell it.
I know we used something like simple solution or amonia then after normal carpet cleaner.
To me cat pee is worse smelling, especially from male cats.

This comes from a person whose dog was recently diagnosed with incontinence (old dog who is nearly 10) & who pees when she hears STRONG thunder.
This is my protcol:
Step 1: Use "Wickel Unterlagen" (available in any baby aisle of Müller or DM) to soak up all the urine
Step 2: Teppich Shaum (carpet foam) from Vanish or some such to treat the carpet
Step 3: Allow to dry etc as per instructions and then vacuum (SHOULD do the trick... if not proceed to step 4)
Step 4: Get this brand new Teppich something product from Vanish (its this powder/pulver thing - follow instructions on box) WORKS WONDERS - but use carefully - I emptied the whole damn box and struggled for 3 days to vacuum it all and also coughed a lot coz I over did the powder treatment thing & I was lazy to calculate size of carpet and allowed treatment measurements
(if even this doesn't work OR rather after repeated such carpet treatments and elbow grease proceed to Step 5, which I plan to do)
Step 5: Ditch the carpet when you move. Mine is some generic wall-to-wall stuff - it was not very expensive. Ebie sort of knows where she had previously done the deed and follows the same artistic motif under conditions of stress. No cleaning product has changed the status of those corners of my carpet from toilet to decor (with regards to canine sense of smell).
Luckily Ebie steers clear of antique Persian rugs, which is wonderful to know that she has good taste.
[Foot notes: "Wickel Unterlage" is basically this baby diaper changing pads/sheets. They are super absorbant and pretty big. Many vets have them too.
Vanish and Meister Proper - are so bloody kick ass ! I love them ! ]

Best and cheapest option I've used is a liberal coating of baking soda followed by white vinegar sprayed on top until it fizzes. The stain will be lifted out; let it dry and brush it off. You'll probably have to do it multiple times.
