in Scotland we call headcheese 'Brawn'
my mum used to make it - can't say I was a fan but I do remember being scared of the pig's very alive-looking snout sticking out above the water as it was boiled in the huge pot.

Brawn is definitely the preferred term. Mike Robinson made brawn in the first series of Heaven's Kitchen and it was on the menu for a while at the Pot Kiln

Isn't there some sort of quality gelatin and pig head based snack sold here? I've certainly eaten some sulze or however you spell it, that certainly looked and tasted pretty brawny to me. Delicious.
