I would never use my favorite red wine for Sangria. Because of the price and the taste.
I've made it with the wines that come in bottles of 3 littres and the Table wines and it was OK, even the next morning. If you do it with an expensive wine and you drink a lot, you'll still get headache

A not so expensive Cabernet should do. But I do agree on the experimenting and tasting it a lot of times before you decide it's ready
At home is usually prepared just with apples and oranges, but I like to throw in the peaches, and If you are a strawberry person, you should definetly try those too.

Where did you get that from? The soda water is optional, and the most important thing is to let the fruit sit in the wine for a couple of hours. If not, you'll be just drinking cold sweetend wine.
At home the one with white wine we call it Clerico, If you do it with white wine, I would put only apples oranges. I don't like it that much.
