For some reason I always thought "sweetbreads" was a euphemism for "testicles". But apparently it's not:

Well, until you become as proficient a cook as Hannibal Lector, I don't know if it's much of an issue.
Yes I am well aware that you don't have to be a cannibal to eat sweetbreads, but he's the best reference.
