Hi all,

Just wanted to share this with you guys,homemade Chicken Curry.

2 large pieces of boneless Chicken (chopped)
2 tablespoons of vegetable oil
pinch of cumin seeds
3 medium size onions
3 fresh green chillies
1 small piece of fresh ginger
2 cloves of garlic
1/3 of a can best tinned tomatoes (mashed if using plum tomatoes)
2 teaspoons of turmeric powder
2 teaspoons of salt
pinch of garam masala
fresh coriander
1/4 glass of white wine (optional)
boiling water.

Add oil in pan until very hot.
add cumin seeds until brown
add very finely chopped garlic until red.(at this point use low heat)
add grinded onions cook until red.
add finely chopped chillies and ginger cook for 5 mins carry on stirring.
add turmeric,salt stirring all the time for a couple of mins.
add mashed tomatoes cook and stir for 10 to 15 mins on low heat.
add wine stirring all the time for couple mins.
add chicken and stir for atleast 5 to 7 mins.
add boiling hot water enough to cover the chicken or little bit more,cook for 15/20 mins with lid on stirring all the time.
check if chicken is cooked, then add garam masala and washed chopped finely corriander.

eat with chuppatis or bread
left over chicken pieces can be put in nan bread add salad and mayonaise.
Enjoy to the full with plenty of beer!!!
