I need to record, in hi-quality stereo, hours of live talks for mass production, without breaking the bank.
I am lost. I used to have a DAT recorder that was great, but no longer. Does anyone have any experience with such devices? I heard that even an
ipod can record, but alas not in stereo.

Go mini disc, cheaper than DAT and still superb recording capabilities and the media is more widely available. A DAT recorder will be higher sound quality, but if it's just voice you won't notice the difference.

I use a Sony MD recorder with an Audio-Technica ATR-25 stereo condenser DV mic with Sony Premium MD's. Bloody awesome capture for the price. They sell the mics at Musik-Eck on Corneliusstr.

I use mini disc as well and it is excellent. Have used an mp3 player before and it isn't as good (it wasn't an ipod).

I find it a bit scary. I record some basslines and always my stepdaughter will wait until I'm in full flow and then come thundering down the stairs like a crazed African elephant. I stop and then she asks some question that could have waited another 2 minutes.
Then later when I play back to edit out the take, I hear her coming down stairs and take off the headphones to shout at her to keep the noise down...
...and she isn't there.
As I said - uncanny capture.
@PES I think the MD Recorder was a MZ500 (or something like that). Got it in Hertie Münchener Frieheit before it was Karstadt. I think it was around 450 Euros, but I know they are much cheaper now. The mic was about 60 Euros.

u can get some reasonable hard disk mp3/wav encoders...no removable media and bloody good quality/storage...

mp3 doesn't capture well - amateur sounds.
@Sin. What do you think of this
microphone? Sorry to hassle you, but you are a man in the know.

the WAV is a beauty to behear though, used at the radio station i used to work at...MP3 wasn't THAT bad either...

Follow this Link mate. It`ll take you to Thomann.de and the Page with portable recording devices. They do of course have their price - but if you want high quality recordings, theres no way around paying for good gear.
