Thai Food, by David ThompsonEverything I've made out of there has turned out an order of magnitude better than anything I've ever eaten in a thai restaurant. More nuanced, more balanced, just more.

chez pim. It's not a thai food blog per se, but the author is thai and often includes recipes she collects when she goes home to visit.
I would take a cooking course to learn how to make bread or to use a knife better, but thai food is not all that difficult in terms of technique, a good recipe should be enough to get going.
