Nutritional yeast

What it's called in German and where to buy

I'm curious about nutritional yeast. A lot of vegans eat it because it has a "cheesy" flavor and is incredibly nutritious. It's different than regular yeast or brewer's yeast--nutritional yeast is grown on molasses and at the end of the growth process killed. (Live yeast is, obviously, alive, while brewer's yeast tastes bitter). Nutritional yeast is very high in B vitamins, especially B12 (it's one of the few vegetarian/vegan sources of this vitamin, in fact). It also has 18 amino acids (forming a complete protein) and 15 minerals.

I want to try cooking with it. But of course I have no idea what it is called in German. This afternoon I intend to go to my local health food store and attempt to explain what I'm looking for, but in the meantime, does anybody know what it's called in German? And where to buy it in Munich?

Well, it's going to be some kind of "Hefe."

I like to make up my own German words. If I went to the store, I'd ask for leckere Nahrungshefe, kein Bierhefe, bitte! (Bierhefe is brewer's yeast.)

it is definately Ernährungshefe. I bought some from a Reformhaus last month smile.gif

If you like vegan or raw recipes. I have a couple raw food "cookbooks"(?) that call heavily for nutritional yeast. Especially when making nut cheeses.

Which two amino acids are missing?

are your refering to the "raw vegan nut cheese"?--asparagine (L-asparagine) and alanine (L-alanine). Unless you can find those two in nuts. I do know that nuts are a good source of arginine (L-arginine).

I realize you don´t want Brewers Yeast due to its bitterness, but it should be mentioned that it also contains all of the aforementioned vitamins and minerals. In this regard, pasteurized, unfiltered, beer is a good source.
