Freezing herbs

I found some fresh coriander in Erding last week, so was wondering, can i freeze loads of it and then pull it out just when i need some? sadly erding isn't quite munich, so i can't just nip down the local asian grocers (although there is a little one) for some fresh stuff.

any tips on going about freezing herbs please...

I think you can chop em up and freeze them in water in those little ice-cube doodahs
I've never personally got my act together enough to do it myself, though

Chop the herb like you would for cooking, place a known quantity in an ice cube tray, fill with water and freeze. Presto, herb ice cubes. When they are frozen transfer them to a sealable plastic bag and they will keep for months. The water will protect them from drying and freezer burn, and when you need some herb just drop it in your recipe as you cook it.

Chop them up and freeze them is fine. A OK way is actually to chop them up, and use ice cube containers topped up with water. Whatever you do, they'll come out as slush, and so are OK to lob in a soup or summit, but obviously canot be used like fresh.
German supermarkets often sell cartons of freeze dried chopped herbs.

so the ones i just lobbed in there in the packet the other day aren't exactly going to be tip top then are they? wink.gif
