Making mayonnaise with no eggs

A good recipe which I always use

The topic of making one's own mayonnaise popped up a few days ago. With bird flu going around, many people are scared of using raw eggs for making mayonnaise. I always use this easy recipe for making my own mayo, goes tremendously well with artichokes. smile.gif

You need:
4 tbsp unsweetened condensed milk*
2 tsp Dijon mustard
salt and freshly ground black pepper
125ml extra virgin olive oil
2 tbsp cider vinegar or white wine vinegar
a squeeze of leon juice
2 tsp yogurt

*in Germany they sell a product called "Bärenmarke" condensed milk, see photo at the bottom of the recipe. You can't go wrong then

Preparation:

Place the condensed milk, mustard, salt and pepper in a bowl and whisk in the oil a little at a time. When all the oil has been incorporated, add the vinegar which will thicken the sauce immediately. Stir in a squeeze of lemon juice and the yogurt and adjust the seasoning to taste.

top tip MB. as mrs grazz is now 'with child', she can't eat all that raw egg, unpasteurised, etc food and i love knocking up a bit of home-made mayo, can't be beaten.

Your welcome smile.gif Congratulations, by the way! I love this recipe, I never make mayo with egg anymore. It only keeps for up to 3 days in the fridge though, so be sure to make the right amount. The amount mentioned in the recipe is enough for eating, say, 6 arichokes. 125ml of olive oil goes a long way.

Interesting. Never heard of mayo with no eggs. This recipe looks like it could be adjusted to taste just like english "salad cream" though.
