Easy Baking

Here's a very simple recipe for Soda Bread, good for when you want bread but have no yeast and little time (and no bread)

350g Wholemeal Flour
125g Oatmeal (those cheap Haferflocken from Aldi are perfect, you just don't want fine meal)
300ml Buttermilk (just the plain stuff)
2 tablespoons Baking Soda
Big pinch of salt
Milk as necessary

Put the dry ingredients into a large bowl, make a well in the centre and tip in the buttermilk. Knead for 5 mins adding milk if you need to. The dough will be soft but not sticky.
Turn out onto a baking sheet (I line mine with foil but use baking parchment if you like). Cut a biggish cross in the top with a knive and brush with a bit of milk.
Bake at 200°c/Gas 6 for 30-35mins until brown and the top sounds hollow when you tap it

Alternatives:
you can cut it into scones if you want to, some folk add raisins but it isn't my thang.
Eat quickly (not a problem) as it doesn't keep that long - very nice with butter and smoked salmon

Thanks for sharing that! I have saved it for future use. Only thing is, I'm more likely on an random occasion to have yeast than I am to have buttermilk, but I'll surely make a point to make some. smile.gif

You can get buttermilk at the petrol/gas station, it is incredibly cheap, if yeast is 12¢, buttermilk is under 30¢ but means that you don't have the proving time or have to have strong flour.

oo, i got excited for a minute, i thought this was gonna be about scones to go with the home-made jam...
i might have to phone my mum and ask her how to make them, actually

Actually seeing as you need buttermilk for scones, the soda bread would be a way to use up the rest of the buttermilk (or make a shake like I did this morning with buttermilk, a banana, TL oatmeal and a dab of honey mmmmmm)
