I was just going to make some supper up quick and I was looking around at what I had, and was thinking to give this a whirl for the veggie wife. Does this sound like it would taste at all good?
White sauce with cheese
Boiled potatoes, carrots
Throw it in a oven thingy with some sweet corn, some bread on top and bake it quickly in the oven. Maybe some fried onions as well.

that is a good feed...you can add in brocolli, cauliflower or pretty much any vege with a tasty cheese sauce!! don't ruin it with fried onions tho and bread on top...simply bake in oven and sprinkle some cheese on the top once it's cooked and grill for a bit....

It sounds good - you will need quite a strong cheese to make a nice tasty sauce, or just perk it up with a bit of garlic and seasoning.
Cheese on top always goes down well in my house!

I made almost the same on Tuesday but with raw veggies.
Slice potatoes (preferably mealy) as thin as possible
Slice leeks diagonally, app. 1/4 inch
Slice carrots as thin as possible
Make the white cheesy sauce (with lots of dried herbs), chuck canned peas and corn into it
Layer potatoes, leeks and carrots in a large baking pan
Pour the sauce over them, making sure they're well covered (if not, fill up with milk or cream)
Cover the baking pan with alumin(i)um foil
Stick into the oven at 180°C (fan) or 200°C
Cook for 40 minutes covered
Uncover, cook for 10 - 15 minutes
This passed the ultimate test: It tasted good cold as well.

The white cheezy sauce is called a Mornay sauce. It's classic and is perfect for this.

I make this all the time but usually with just broccoli and cauliflower. Half a teaspoon of dry mustard is really good in the cheese sauce, as is lots of freshly ground black pepper.

I actually ended up doing two. used broccoli, potatoe and carrot. edamer and emmentaler cheese, nutmeg, oregano, salt, pepper and a tin of broccoli cream soup, (added to the white sauce). put half the veggies in a bowl, added the sauce and put bread on top and threw it in the oven with a lid on. I then added to the remaining sauce noodles and chicken thigh meat (precooked), plus the remaining veg. put in a casserole bowl covered in fried (the dutch kind) onions and gouda cheese. Turned out easy and fabulous. Wife said she loved it and would want to have it more often (ie repeat) so fab for vegetarian and meat eater alike.

The one with the chicken wasn't vegetarian - the other one was. Two dishes, two people, both happy. Sounds delicious.

Chickens are only fast plants. I got this from the National Lampoon back in the 1960s.

You were confused, I saw the title of this thread and thought "vegetarians in a cheesy sause, sounds good". Imagine my disapointment.

it is very! but to do this make a roux (melt butter and then add flour and cook that mixture then add milk to make a thick white sauce) but make it very thick then add the water that the vegetable/s where cooked in and add salt pepper and what ever else you want (a little nutmeg is normally good) and serve with the vegetable in the sauce.
works well with cauliflower and broccoli.
oh and you could add some cheese to that aswell, so some nice blue cheese would go well with cauliflower and some strong chedder with broccoli.

try spinkling with crumbled crisps for a change instead of bread crumbs then topping with grated cheese
