Cooking with truffles

Recipes sought

I love anything with truffles and before I take the plunge and buy some I've purchased a glass of truffle paste. Now I'm looking for some recipes and ideas for what to do with it.

I've also bought some tagliatelli so will probably attempt a truffle pasta sauce first so any tips for this would be much appreciated as well.

Scrambled eggs is supposed to be quite nice with truffles.

To be honest truffle paste is a waste of time and won't even vaguely approach a real truffle in terms of taste and aroma. Splash out 50 eur on a bit of real truffle and grate it over scrambled eggs or over some fresh egg pasta. A real truffle should leave you with this feeling of addiction and a mini cold turkey mere minutes after you finish your meal.

Truffle paste is indeed utterly wank.

Get hold of something better, and give this a whirl.

I sense a kindred spirit. You forgot to mention that once you've tasted it you can never really get the thought of when you're going to get your next fix out of the back of your head. I'm positively shaking at the thought of Don's langoustines with truffle sauce.

I made the tagliatelle con tartufo for dinner last night which was basically nothing more than tagliatelle with butter, parmesan and the truffle paste. It was very, very good but you're absolutely right, it doesn't compare to the real thing.

I love risotto with truffles. One of my favourites! The restaurant Taverna del Sud makes a mean risotto with truffles. They also do linguine with truffles if I remember correctly.

October's a nice time to visit Piemont and go to the truffle markets in Alba and go red wine shopping...

Oh yes, and some chocolate shopping.

Ohh, how can you all be so cruel? I'm stuck in Mainz, where they wouldn't know a truffle if it bit them on the wossnames. I have truffle paste, of course, but it's the equivalent of methadone; I am now longing for the proper stuff!!

We went to Frankfurt a while back and had a pizza with fresh truffels on so maybe they buy them local? It was this place.
