Can anyone recommend stores where one can find cold cuts without sodium nitrate? I was disappointed when I recently went to a Bio Company
store and found that all of their cold cuts contained sodium nitrate even though they are classified as Bio (organic). Thanks in advance.

I'd like to know the answer, too. It seems to me they don't exist here. Surprising, since Germans are concerned about practically every else health oriented.

While sodium nitrite is probably safer than the botulism it helps prevent its pretty much just in prepackaged - so pay extra to get a butcher to fresh cut cold cuts for you if you are that afraid of it.

i think you may be confusing sodium nitrate with sodium nitrite.

Yeah, I think you mean sodium nitrite. It seems that the coldcuts are available in some 'bio' places, the only problem is finding the right one in your area. If you google Aufschnitt ohne Nitritpökelsalz you'll come up with a number of entries for companies that don't add it.

Roberts Bio-Geflügl
Weizenfleisch
Bioland

In another article I came across they stated that Demeter also leaves out the sodium nitrite, but I haven't explored their site yet.

Too much nitrite in the diet has been linked to higher incidences of cancer in kids. I haven't done a ton of research on this... My kid eats more cold cuts here than he did in the States, so I'm just curious. Most of the K kids have it in their snack here, so he wants it too...

Many nutritionists recommend not eating ANYTHING with sodium nitrite in it because if its carcinogenic qualities, but hey, this is Germany - what are you gonna do? Starve?

Yeah, my mom is a PhD organic chemist, and she is always harping on sodium nitrite in foods... she says it'll kill ya. I say the same about Aspartame. And there is SO much of both of these ingredients in food here! It pisses me off to see the latter in kid's yogurt... GRRR.

While sodium nitrite + heat can create nasty nitrosamines, the percentage used in conjuncture with the mandatory addition of asorbic acid (at least in the US) makes it pretty irrelevant a concern in the grand scheme of things.

At the end of the day, what isn't linked to cancer by one study or another...

I know, but some kids (like my nephews) eat a LOT of hot dogs, and that is definitely not healthy. It's just nice to have alternatives...

Basically, all processed food will kill ya (or at least give you diabetes).

Whereas some of us eat relatively healthily and develop diabetes due to shitty genetics (thanks dad!)..

Very true, and it's really hard to know what to believe. We sure do like our bacon, though.

Same here... I've had it for a year. I'm 6 feet tall, 150 lbs. Athletic, health conscious. Go figure.

For those in the South of Germany, Chiemgauer Naturfleisch don't use it and can be found in many Bio shops at this end of the country.
If ham looks suspiciously pink, it is more likely to have this additive (E250), so I think I read somewhere that the Spanish and Italian air-cured hams (Parma, Serrano...) are less likely to contain it.
Otherwise, the good old roast chicken from the hot counter might be a good solution - salad or soup base for you, next day's sandwiches for the kids.
