Cooking with fresh chilies instead of powder

Advice on how, recipes, using up excess chillies

So with my abundance of fresh Chili’s at the moment I am trying very hard to come up with novel ways to use them up. I have already scorched my work colleagues with Jalapeño Corn bread biggrin.gif

With some digging to find better and more interesting ways to warm up the working relationships I came across a recipe for chocolate chilli bites.

Basically, butter, dark chocolate, sugar, eggs, small amount of flour and 1-1/2 tsp ground chilli.

I am thinking 2 of my relatively high heat red chillies might just do the trick. Any suggestions?

The next question is how to subsitute the flour for a gluten free alternative so I can share this with my Chocolate and Chilli loving mate who give me the suggestion to pair chocolate and chilli in the first place.

Go carefully substituting fresh chillies for powder - at least dry them first as some recipes won't work as expected with the extra moisture that fresh chilli would bring.

An alternate suggestion for your yummy little jalapenos is to stuff them and grill them. I usually just cut them in half, pull out the seeds (leave the membranes in to increase the capsaicin content if you like them more spicy) and fill them with a mixture of cream cheese, mozzarella, diced garlic, a bit of oregano and some ground black pepper. Fill them to the point where the cheese mixture is higher than the chili half then wrap the whole thing in a piece of bacon and fix it with a toothpick. Toss them on a hot grill until the bacon is crispy and the cheese is starting to ooze out.

The Jalapenos are almost finished for the year but now I am picking 1 to 2 KG Cayenne twice a week so been drying, pickling and freezing like crazy as well as giving lots away to any one that has a need for HEAT.
Will try the recipe and let you know how it works out. Away for the weekend so will have to wait unitl Wed next week.

Bring them inside. They often flower again, even during winter, in my house.

So I threw the Chocolate Chili bites together last night and substituted three fresh chilies for the powder and it was success. The only down side was that the heat was not what I had hoped for but I know better next time to add more!

The biggest challenge seems to be making sure that there is a uniform blend but this in some ways adds to the joy of eating because the heat can vary bite to bite and piece to piece. Definitely a repeat is required.

Why was my post deemed "junk" and these were not? At least I gave a suggestion of what to do with "excess chilies" as the title asked!
I was actually contemplating not posting it cause I think there is a real opportunity to actually take that idea to market as a novelty item. rolleyes.gif
