Fajitas recipe that I am using:

QUOTE (iain @ Aug 30 2007, 3:59 pm) *
added spices to oil (cumin, paprika (sharf), chili powder (hot), black pepper freshly ground) as well as half a habenero pepper finely chopped, onion not so finely chopped, a couple pieces of garlic finely chopped and chopped up chicken breast (2 breasts). Leave it to sit for a couple of hours or overnight in the fridge and then do it up in the pan with the oil it's been sitting in and through it into tortillas with salsa and lettuce.

Now can anybody suggest some side dishes or something to compliment this dish? I'm not having any inspiration today and a friend is coming over for a late lunch at two, but I'd also be interested in what other people would do for future ideas.

Thanks

Guac is very easy to make. A couple of fresh avacados, garlic, a jalepeno or habenero, salt, lime juice and perhaps a fresh tomato de-seeded and finely chopped then mush together.

Refried beans, rice with a bit of tomato sauce. TBH, when I have fajitas, I don't need side dishes. Do add shredded cheese, sour cream, and guacamole as possible toppings...

Uncle Ben's instant Mexican rice is really good. Or refried/black beans

yeah those microwavable mexican rices are pretty good and quick to make.

yep I chedder ready to be grated, sour cream might happen if the weather improves, but the friend was sapposed to make guac, but forgot to buy avacados. I'll definately put the beans and mexican rice on the go.

I still have some mexican rice from my last trip to america, maybe I'll put that on the go.

chili beans basically pick up a can of chilli beans or refried beans, and heat it up.. or spanish rice recipes are easy enough to find.

pico de gallo basically chop onions, tomato, some jalepeno if you can find it or one green chilli pepper if you cant or look for some pickled jalepeno, chop them some lime juice, pepper and cilantro ( fresh corriander)

You could also just fold the tortilla a different way to create a completely new Mexican specialty
